Tomato Jam

2-3 large tomatoes rough chopped
 

 
4 garlic cloves smashed
 

 
1 tbsp butter diced
 

 
Salt & pepper
 

 

 
Toss it all together and roast for 30-40 mins at 425°
 

 

 
Stir every 20 min.
 

 

 
Texture will be thick and creamy when it's done.
 

 

 
Use on top of pasta, smear on toast or just eat with spoon
