Roasted Kale with Kumquat Ginger Compote

1 lb kale, rough chopped

For compote
 

 
18 Kumquats
 

 
1/4 cup sour beer (Monkish Knowledge and Peace)
 

 
1/2 in fresh ginger
 

 
1 tbsp raw sugar

Ruff chop all compote ingrediatnts in blender

Spread over torn kale leaves

Roast for 30-40 mins at 350°

Stir every 20 min or so.
