Black Beauty Eggplant Hummus


1 large black beauty eggplant

1/4 olive oil

1/2 cup cooked garbanzo beans

2 tbsp lemon juice

2 tbsp tahini paste

1 tbsp minced garlic

salt & pepper to taste

1 tbsp parsley for garnish

Peel the eggplant and discard skin, slice into 1/4 rounds. Drizzle with olive oil and roast covered 400 for about an hour. Place all ingredients in a food processor and blend. Great with pita chips, toast or crudite.
