Whipped Garlic Dip

1 cup young garlic, rough chopped- (remove stem & outer stalk)

1/2 cup lemon juice

pinch salt

4 cups canola or sunflower oil (do not use olive oil)

Blend first 3 ingredients in vitamix or blender. With blender on, drizzle in oil slowly about 5-10 minutes until a fluffy, mayonnaise consistency.

Chill for at least an hour before devouring. Best with bread, crudite, pizza crust and to avoid vampires.
