Zucchini Fritters


1.5 pound Zucchini grated 1/2 tsp salt 1 egg 1/4 cup flour (OR Potato starch) 3 Tbsp chives (OR onion tops) 1 Tbsp cornstarch (OR arrow root OR tapioca starch) Combine zucchini and salt, toss, let rest 10 minutes, squeeze out liquid. Mix all ingredients together, form patties, cook in skillet with 1/2 inch of oil about 3 minutes on medium heat on both sides, or until cooked through.
