Leftover Veggie Brunch


Left over Veggies dish (mashed potatoes, sweet potatoes, roasted root veggies)

Olive Oil

Salt & Pepper

Eggs

Heat the oven to 425°F.

Drizzle olive oil in a baking dish or cast iron skillet.

Add a layer of the (already cooked) veggies

Make small dent in the veggies and crack in eggs. Sprinkle eggs with salt and pepper.

Bake for 15 minutes, or until the the eggs are baked to your preference.

Enjoy.
