Nutrients: good source of vitamin C and fiber, also contains potassium, magnesium, calcium, phosphorus, and iron.

How to Eat: (just a suggestion)

Cut open and remove seeds.

Enjoy chopped and fresh on a salad, or stuff and bake. Also great quick pickled.
