Amaranth greens can be eaten raw in salads, added to soups or stir-fried.


Flowers can be used as topping for salads, soups, or mixed into a herb butter. They can also be used as a natural food coloring.


Seeds (shake the flower to harvest the seeds) are a grain or quinoa replacement.
