1 lb Fingering Potatoes
1/2 stick of butter
2/3 cup grated mizathra cheese
Roast potatoes at 425° for 40 min or until a fork enter easily when poked.
While potatoes are roasting, slowly melting butter over medium heat until golden.
Skim butter solids (white froth) off top.
Remove potatoes from the oven, and smash each potato with your pot holder covered hand until it flattens and cracks open.
Toss potatoes with butter.
Sprinkle with cheese.
