Arugula Chimmichurri

1/2 cup lemon juice or red wine vinegar 
1 t salt
4 garlic clove minced
1 T shallot or onion
1 cup cilantro fine diced
2 cup arugula fine diced
1 cup parsley fine diced
1/2 cup olive oil

Mix ingredients together and chill for about an hour.  Use as a steak or lamb marinade. Great for dipping with bread. Or Farmer Steph's favorite, on burgers!
