Tomatillo Enchilada Sauce

1 pound tomatillos (husked and rinsed)

1 pound tomato

2-4 garlic cloves

1 serrano or 2 jalapeno (adjust as necessary)

1 white or yellow onion, rough chopped

1/4 olive oil, beef or pork fat

2-3 cups broth, or water

 

Simmer all ingredients, about an hour until desired consistency.

 

Blend ingredients and use as the base to build enchiladas.

 

Also works great as a salsa.
